This was a nice recipe to start of the holiday season with.  Christmas and New Years always seem to scream out for chocolate and I know a lot of us are reaching the end of our chocolate ropes but this one was very nice.  I love these types if sort of mix and pour cakes that are almost like a nice dense pound cake that go so well with coffee or tea and are great for breakfast or snacks but this was also nice and light and flavorful with a nice chocolate hit without being too cloying or intense.  It really just hit the spot for this time of year.  It didn’t hurt that this was so easy you could whip it up in no time and still get to all those holiday sales with time to spare.  Without any further ado, let’s bake… 

  

  

  

This cake couldn’t get any simpler.  Mix cocoa and hot water into a smooth paste and set aside until needed.

Next, combine eggs, water and vanilla and set aside until needed.  Then in the bowl of a stand mixer combine the flour, sugar, baking powder, baking soda and salt.  Add cocoa paste and butter 

Blend on low for a few seconds to combine and then add the cocoa paste and butter and blend to combine, then raise the speed to medium and blend for a minute and a half.  Add the egg mixture in two additions blending about 30 seconds after each addition.

Scrape the batter into the prepared pan and bake for 50 to 65 minutes or until done.
